Patatas Bravas

Patatas bravas are traditionally deep-fried, but these are roasted - my kitchen's not really set up for deep-frying. The ready-prepared garlic puree works a lot better in this than fresh, since it's far less inclined to burn. You can reduce the olive oil if you wish, but this is the minimum amount I feel will give a good result.

Serves 4-6 as a side dish.

Place all ingredients onto a baking tray large enough to hold all the potatoes in a single layer. Mix it all together well, using your hands to ensure an even result, then spread it out, making sure the potatoes are in a single layer.

Roast in a moderately hot (200C/400F) oven for 20 minutes. Use a spatula to lift and turn the potatoes around a bit. Roast for another 10 minutes, or until done to taste.

Serve hot.
