Green Beans (or Carrots) with Sesame Dressing

This recipe is very slightly adapted from Soei Yoneda's Good Food from a Japanese Temple. I've only really changed the wording. This dish also works well with julienned carrots.

Serves 4 as a side dish

1. Clean green beans and cut into 1-inch (2-cm) lengths. Simmer in boiling water (or steam) until cooked to taste. Drain and cool.

2. Toast the sesame seeds in a hot dry frying pan until they start to pop. You want the colour to darken only very slightly. When they're ready, you should be able to smell them!

3. Grind the toasted sesame seed to a rough paste using a pestle and mortar, or in a blender. You don't want a complete puree; there should still be some texture to it. Stir in the soy sauce, sake and sugar.

4. When the beans are cool, arrange them attractively in one large or four individual dishes and drizzle the dressing on top.
