Gingerbread

The best gingerbread recipe ever. You will probably want to make a double batch. You can use self-raising flour instead of the plain flour plus bicarb if you like - it's still good. I originally got this recipe from neve but I've changed it somewhat.

Fills a 2lb loaf tin.

1. Grease and line a 2lb loaf tin, and preheat the oven to 160C (325F, Gas Mark 3).

2. Sieve flour, bicarbonate of soda, cinnamon and ginger together.

3. Heat the soya margarine, sugar, golden syrup, black treacle and soya milk together until everything is melted.

4. Pour the margarine mixture into the flour mixture and mix well. It will be sloppy. Pour the resulting batter into the loaf tin, and bake in the oven for 1 hour.
