Not that I'm Japanese, but I've seen a couple of cookery demonstrations by a Japanese cook (Junko Murayama at the Healthy Living Supper Club). My standard disclaimer, and more, applies - these dishes may not all be `authentically Japanese', but they're certainly not travesties. And, of course, they're delicious. Where a Japanese name is given for a dish, I got it from a Japanese cook, or a book written by a Japanese cook.
