Slightly adapted from the Cosmopolitan Vegetarian Cookbook, by Amanda Grant. This dressing is really good with watercress; its peppery flavour goes very well with the rich, spicy dressing.
Makes 6-8 tbsp
1. Whizz all ingredients in a blender, then tweak texture and sweetness to taste, by adding more water, orange juice, or oil.
2. Serve over a salad of green leaves; the original recipe used watercress, ripe plum tomatoes and red onion; a very successful combination. This might also be nice over noodles, with a green vegetable side dish.
