I made this one up, though I've probably read something similar in some cookery book somewhere.
1. Finely chop the onion and garlic and coarsely grate the courgette.
2. Melt the margarine in a small nonstick frying pan. Add the onion and garlic with 1 tbsp water and mix well. Cover and cook gently for about 10 minutes until the onion and garlic are soft but not brown.
3. Add the courgette and mix well. Cook gently, covered again, stirring occasionally for about 10 minutes until the courgettes are soft but not too soft (you may want to remove the lid towards the end of cooking if there's too much liquid). Season to taste and serve.
