Chickpea and Orange Salad with Fresh Mint

Totally made up. Very simple and very tasty. The fresh mint is not optional.

Serves 2 as a light meal, 4 as a side dish

1. Separate one and a half of the mandarin oranges into segments, removing as much white pith as possible. Cut each segment in half, and remove any pips.

2. Squeeze the juice out of the remaining half mandarin, and discard the pulp.

3. Mix the mandarin segments and juice with all other ingredients in a bowl. Leave for half an hour to allow the flavours to mingle. Serve cold or at room temperature.
