Give GNUstep a try. It's descended from a common ancestor with Mac OS X although I've no idea what state it is in in the Gnome-centric Ubuntu. One thing you won't miss is the horrible mess of launchctl. ;-)
I have an old Epson Stylus Photo 1200 which I can't find any reference to but suppose it would require CUPS or Gutenprint to work possibly.
