Dovecot is certainly what I use, and is fast, has a decent config file, and is "quite flexible" (tm). For a bog standard setup, a simple aptitude install dovecot-imapd should do.
Mark I'd echo that. I managed to get dovecot working with postfix and a backend MySQL database in a groupware package relatively easily by following the dovecot wiki instructions on local delivery. Postfix and dovecot work together well.
